Colorful, creamy, and bursting with flavor — Causa Peruana is like sunshine on a plate. This Peruvian classic layers silky mashed potatoes infused with lime and ají amarillo around a zesty filling of chicken or tuna salad, avocado, and hard-boiled eggs.

Ingredients
2 lb Yukon Gold potatoes
1 lb Chicken breast
4 unit Lime
2 unit Avocado
2 tbsp Aji amarillo paste
3/4 cup Mayonnaise
1 unit Red onion
1/5 cup Cilantro
1 tsp Salt
1 tsp Pepper
1/4 cup Extra Virgin Olive Oil
4 unit Eggs
Instructions
- Step 1. Peel and boil the potatoes until fork-tender. Drain and mash them with the 3 limes (about 1/2 cup), olive oil, aji amarillo, salt, and pepper. Let it cool.
- Step 2. In a small pot, boil water; add eggs and cook 8-10 minutes until hard-boiled. In a separate pot, poach the chicken breast in water, salt, and pepper until cooked through. Shred the chicken and set aside. (Tip: use a hand mixer to quickly shred the chicken while warm.)
- Step 3. While chicken cooks, slice avocado, red onion, and roughly chop cilantro. Remove eggshells and slice eggs.
- Step 4. Once chicken cools, mix with mayonnaise. Separate 1-2 tbs of mayo in a plastic bag with a splash of water.
- Step 5. To assemble, spread half the potato mixture on the bottom of a glass dish. Then, spread the chicken evenly across the dish; cover with onions and avocado. Add the other half of the potato mixture evenly across the top. Garnish top with egg slices, drizzle the mayo mixture (clip corner of plastic bag), and sprinkle cilantro.
- Step 6. Chill the causa in the fridge for at least 1 hour before serving.
