Ingredients

1 lb bite-sized potatoes
5 Thick bacon
8 unit eggs
1 cup heavy cream
1 cup Jalapeño cheddar cheese, shredded
1 tsp salt
0.5 tsp black pepper
3 unit Green onions
0.5 tsp onion powder
2 tbsp parsley, chopped

Instructions

  1. Step 1. Preheat the oven to 375°F (190°C) and grease a 9-inch pie dish.
  2. Step 2. Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet, crumble or chop into small pieces, and set aside.
  3. Step 3. In the same skillet, cook the bite-sized potatoes until they are slightly browned and cooked through. Season with salt, black pepper lightly.
  4. Step 4. In a mixing bowl, whisk together the eggs, heavy cream, cheddar cheese, and chopped green onions. Season with a pinch of salt and black pepper.
  5. Step 5. Spread the cooked potatoes and bacon evenly in the prepared pie dish. Pour the egg mixture over the top.
  6. Step 6. Bake in the preheated oven for about 50 minutes, or until the quiche is set and golden brown on top.
  7. Step 7. Let the quiche cool for a few minutes before slicing and serving. Enjoy!
