Delicious and healthy crepes filled with fresh strawberries, raspberries, and a zesty lemon flavor.

Ingredients

1 cup all-purpose flour
2 unit eggs
1.5 piece milk
0.25 tsp salt
2 tbsp butter
1 cup strawberries
1 cup raspberries
1 tbsp lemon zest
2 tbsp lemon juice
2 tbsp honey

Instructions

  1. Step 1. In a blender, combine flour, eggs, milk, and salt. Blend until smooth.
  2. Step 2. Heat a non-stick skillet over medium heat and add 1/2 tbsp of butter.
  3. Step 3. Pour 1/4 cup of batter into the skillet, quickly swirling to spread the batter thinly.
  4. Step 4. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another 1 minute. Repeat with the remaining batter.
  5. Step 5. In a small saucepan, combine strawberries, raspberries, lemon zest, lemon juice, and honey. Cook over low heat for 5 minutes, stirring occasionally.
  6. Step 6. Fill each crepe with the berry mixture, fold, and serve hot. Enjoy!
