Ingredients

2 lb sweet potatoes
1 unit red pepper
1 unit onion
8 unit eggs
2 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp paprika
2 tbsp fresh parsley

Instructions

  1. Step 1. Peel and dice the sweet potatoes into small cubes.
  2. Step 2. Chop the red pepper and onion into small pieces.
  3. Step 3. In a large skillet, heat olive oil over medium heat.
  4. Step 4. Add the diced sweet potatoes, red pepper, and onion to the skillet. Season with salt, black pepper, and paprika. Cook for about 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
  5. Step 5. Create wells in the sweet potato mixture for the eggs. Crack an egg into each well.
  6. Step 6. Cover the skillet and cook for an additional 5-7 minutes, or until the eggs are cooked to your liking.
  7. Step 7. Garnish with fresh parsley before serving. Enjoy!
