Description

Ingredients
2 lb sweet potatoes
1 unit red pepper
1 unit onion
8 unit eggs
2 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp paprika
2 tbsp fresh parsley
Instructions
- Step 1. Peel and dice the sweet potatoes into small cubes.
- Step 2. Chop the red pepper and onion into small pieces.
- Step 3. In a large skillet, heat olive oil over medium heat.
- Step 4. Add the diced sweet potatoes, red pepper, and onion to the skillet. Season with salt, black pepper, and paprika. Cook for about 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
- Step 5. Create wells in the sweet potato mixture for the eggs. Crack an egg into each well.
